Banh cuon is one of Hanoi’s most popular dishes, mainly served for breakfast (see Video on Vietnamese Meal). Although it is reputable with the locals, not many tourists know about this specialty.
Banh cuon is probably one of the dishes strongly influenced by French cuisine. It is a thin crepe-like savory cake, with some meat and mushrooms wrapped inside. The process of making rolls is similar to making crepes. The only difference is that the pastries are steamed with a rice-based mixture, rather than lightly oiled with a wheat-based liquid like crepes. This gives the dish a mild yet unforgettable flavor and thin and delicate texture.

The cake is completed by the accompanying sauce – a mixture of fragrant fish sauce blended with the mild sour taste of lemon, Cha silk – Vietnamese pork rolls and fried onions. Vegetarians can avoid meaty ingredients by asking for a simple Banh Cuon (Vegetarian Banh Cuon) that doesn’t change the flavor significantly.
Banh cuon can be found at many local eateries in local markets or just a few blocks away. Look for a steaming pot and a bright yellow sign ¨Banh cuon¨ and you’ll be served this mouthwatering delicacy for just one dollar.
