The rice fields that stretch across the country provide a huge amount of rice, the main ingredient used to produce most Vietnamese noodle dishes. It can be said that noodles in Vietnam have the most diverse shapes and ways of processing. Noodles can be fresh or dried, white or brown, flat or round, served in a bowl of broth, mixed with herbs in a salad, or sautéed with some meat and vegetables.

“Vietnam is crazy about noodles” – many people have to agree. While rice balls are an irreplaceable main dish in Vietnamese family dinners, vermicelli is a favorite breakfast, lunch and late-night snack for many locals. Some cook and enjoy at home, while others spend their time at familiar roadside stalls or restaurants to enjoy their favorite food and chat with friends.

However, most Vietnamese still prefer to enjoy vermicelli at roadside stalls because of its authentic taste, vibrant atmosphere, and in some places, it’s a habit.
