Nowhere in Vietnam are there as many varieties of sticky rice – also known as sticky rice – as in Hanoi. But standing out among the many types of sticky rice, sticky rice is not only a creative art with a delicate combination of ingredients and colors, but the sophistication is also reflected in its strange name.

Xoi Xeo is considered to be one of the most difficult sticky rice dishes to prepare despite being made from ingredients that are very popular and familiar to Vietnamese people. The ingredients for making sticky rice are the same everywhere: glutinous rice, turmeric, green beans, chives and a little liquid fat. Turmeric powder mixed with water and glutinous rice will create a natural yellow color for the dish. Green beans after being carefully selected and peeled; are steamed, rolled and then pelleted into small balls.

Visitors are often amazed at the scene where the seller skillfully smashes those beans into the palm of his hand, covering the base with a thin layer of yellow beans. On top of the portion put deep fried brown chives. To perfect the flavor of sticky rice, the seller will add a tablespoon of liquid fat.
